Here I am 20 weeks pregnant, and surprise surprise- I am eating food..a lot of food. My cravings for olives and oranges is still going strong, but my appreciation for food in general lately is crazy. When you can’t appreciate a nice glass of wine or beer {or dirty martini} you fall even more in love with food than ever before.
The truth is I did not have so much craving for food when I was not pregnant. Moreover, I refrained from eating junk food and solely focused on creating a healthy eating routine. I seemed to be so much into it that I even thought of considering dietary supplements similar to Nucific Bio X4 (those interested can check out the Bio X4 reviews on the Internet before using it) to support my digestive system and improve my metabolism. Additionally, when I was not pregnant, I had a time set for when to have my meals. But now that has changed along with my craving for food, which has increased to an unimaginable extent. I am just eating regardless of the time. However, I must say that because of my cravings, I got to learn some really delicious recipes.
Here are some of them that me and the babe have been enjoying lately:
Edna Maes Sour Cream Pancakes. I am so in love with these. AND to make them a little more healthy I use all greek yogurt instead of sour cream. So much more protein and you can’t tell a difference at all.
Our Best Bites Banana bread. Pictured is the one they make with a chocolate swirl {which is obviously the yummiest option} but to make it a little more healthy I switch it up. That way, when I eat three slices easily in one day, I don’t feel quite as guilty! I cut the sugar down to 2/3 cup, add 1/4 chia seeds, and walnuts or pecans {whatever I have on hand}. I also use greek yogurt instead of plain yogurt. TRUST me people, if you haven’t made the switch to greek yogurt yet in life..you must! Its so much better tasting, and so much better for you! Also, I haven’t tried much of any real Greek cuisine, and can’t stop wondering how it’ll be. Maybe I should visit a Gyro Restaurant in Astoria or somewhere nearby and see how it tastes!
Ground turkey stuffed peppers. Not pictured the prettiest but delicious nonetheless. I made ours with brown rice, and only put about 1/2 the cream that it calls for. Even J liked these, which says a lot for a guy whose not a veggie guy at all.
Skinny turkey stew, texas style. I made this yummy recipe with leftover turkey from Thanksgiving. Perfect! It was definitely a little spicy, but that could have been because I never actually measure out the 1 tsp. of red pepper flakes, I usually just throw some in! It was really nice being able to throw in so many veggies and have everyone enjoy it. And if it were up to me, I would eat some sort of soup/stew every night!
Petite lasagna. To be honest I haven’t made these yet, but they seem like perfection! I love lasagna, and I love mini versions of anything..which makes these too fun to not try!
Garlic greens. I love these so much. This blog is an adorable mom,artist, and vegan. By no means could I ever become vegan, but I do love some of her recipes. This one is more guidelines than a recipe, but I love it with kale nonetheless.
