Split Pea Soup
adapted from Our Friendly Kitchens
I made this pea soup the other week from Our Friendly Kitchens and it was so good. So good that J, who swears he HATES peas, pea soup, anything peas, even liked it! He said he just told himself that it was bacon soup, haha, and ate it all up.
Here’s the wonderful recipe {changed up a little by me}:
1 green onion (thinly sliced)
1 large carrot (thinly sliced)
1 celery stalk (diced)
5 cups of vegetable or chicken broth (or 4 cups water + 4 tsp chicken bouillon)
2 cups green split peas
2 TBSP finely chopped fresh flat leaf parsley
¼ tsp marjoram
¼ tsp thyme
Salt and freshly ground pepper to taste
4 slices of bacon
1 TBSP olive oil
Ladle the soup into warmed bowls and garnish with the crumbled bacon. Serve immediately.
It was yummy, and the best part- enough left to freeze! Have I told y’all how much I love having homemade soups in my freezer at all times?

Yummy! That looks so good I will have to give it a try! I also live in Phx and this is the one winter day that is raining and cold, perfect idea! Have a happy day!

Seriously, I hate peas too, and when my sister first told me that is what she had made for dinner I was not excited but it was soo good. 🙂
