If you remember I last visited with a delicious fall dessert recipe. These apple hand pies are easy and seriously so good, be sure to check those out if you haven’t already.
Well today I thought I would share something with y’all that could be passed around the table during the upcoming holidays.
Sometimes my best recipes happen when I just start throwing things together without any kind of plan. We just recently moved and our refrigerator was a little bare, the kids were having macaroni, and I knew that I wanted something indulgent, yet good for me. I began adding different ingredients that filled my fridge, getting all sorts of strange looks from my husband, but then being reassured when finished by getting some pretty good mmm’s and that’s amazing while we shared a plate.
The key to good Brussels sprouts is a searing hot pan and a lot of seasoning. The hot pan allows the leaves to caramelize and the generous seasoning helps cut the bitterness. Top them with a scoop of your favorite hummus, some feta cheese, and a crisp apple, and well…just trust me.

Brussels Sprouts with Apples and Feta
Ingredients
1 Pound Brussels Sprouts trimmed, rinsed, and halved
1/4 Cup Olive Oil
1 Tablespoon Butter
1/2 Apple diced
1/4 Cup Feta Cheese
Heaping Tablespoon Hummus of your choice
Salt
Pepper
Garlic Powder
Sprinkle Red Pepper Flakes
Brussels Sprouts with Apple and Feta
Directions
Heat a medium sized pan with olive oil and butter. Wait for oil and butter to begin to bubble before adding in prepared Brussels sprouts. Once added turn heat down to medium. Season generously with salt, pepper, and garlic powder. Allow Brussels sprouts to cook without stirring often, this keeps them from falling apart. Cook until caramelized and then add in a tablespoon of water and cover. Finish cooking for about five minutes. When finished plate Brussels sprouts and top with feta cheese, apples, hummus, and a sprinkle of red pepper flakes. Enjoy immediately.
