Candied Pecan Salad

With it being a million and one degrees here, we have been eating a lot of salads. Not just plain salads, I like to have a bunch of delicious items in there. This is one of my most favorite combos lately:


Ingredients:
Mixed greens or spinach
Raspberries
Strawberries
Feta cheese
Candied pecans
Balsamic dressing 

For the pecans, I follow Our Best Bites easiest method ever. Simply use 1/2 the amount of sugar to nuts. For this salad that fed 15 people, I used 1 cup pecans and 1/2 cup sugar. Place both ingredients in a pan over medium heat and keep stirring, especially once the sugar begins to melt. Once the nuts begin to brown, dump them on a piece of parchment paper. Best candied nuts ever!


For the dressing I use All Recipes Honey Dijon Balsamic dressing, except I add in 3-4 cloves of garlic.


What random things do y’all add in to your salads? I hope for your sake that it is not nearly as hot where you are as it is here. Excessive heat warning for three days this week- i’m over it.
