Cooking Club: Pioneer Womans Enchiladas

As I told y’all yesterday, I love cooking club. The time with girlfriends and the amount of good food thats eaten, whats not to love?!

The pups feel as though they are part of the club;)

 Last night I made Pioneer Woman’s Enchiladas. They were amazing. Hands down the best enchiladas I have ever made! Heres what you need for them, and go to PW’s site for the directions:

  • FOR THE SAUCE:
  • 1 Tablespoon Canola Oil
  • 1 Tablespoon All-purpose Flour
  • 1 can (28 Ounce) Enchilada Or Red Sauce
  • 2 cups Chicken Broth
  • ½ teaspoons Salt
  • ½ teaspoons Ground Black Pepper
  • 2 Tablespoons Chopped Cilantro
  • _____
  • FOR THE MEAT:
  • 1-½ pound Ground Beef
  • 1 whole Medium Onion, Finely Diced
  • 2 cans (4 Ounce) Diced Green Chilies
  • ½ teaspoons Salt
  • _____
  • FOR THE TORTILLAS:
  • 10 whole (to 14) Corn Tortillas
  • ½ cups Canola Oil
  • _____
  • TO ASSEMBLE:
  • 3 cups Grated Sharp Cheddar Cheese
  • ½ cups Chopped Black Olives
  • 1 cup Chopped Green Onions
  • ½ cups Chopped Cilantro

We all enjoyed homemade salsa, guacamole, cheesy dip, enchiladas, sopapillas, and fresh margaritas. It was heaven. These are the lovely ladies I dine with, we are all pretty smart… especially me. I used my own camera and totally forgot that the self timer shoots three shots. Whoops!
Ill leave you with a shot of me and my baby. In case you didn’t know.. I do have a baby. He comes in the form of a 60lb Boxer pup:)

    Those look amazing – you ladies did an awesome job I wish I had a cooking club… humm maybe I’ll make one ha ha.

    I just bought a mexican sarape blanket that I plan to use as a table cloth (I posted photos yesterday if your interested) so maybe I’ll make these for the first meal!

    i must admit your baby is why i started following your blog…i myself am a huge boxer lover my Jordan at 1 point weighted in over 100lbs she was huge not fat she was solid as a horse, i loss her after 13 wonderful yrs so when i see people with boxers i know there worth following…and you sure have no disappointed me…..

    I totally made these last night with my step son and FORGOT the green onion. They were still good and we will be making them again. Next time possible chicken. Thanks for sharing the recipe!

    I made these enchiladas and they were the best enchiladas I ever had in my life. I don’t even LIKE enchiladas, (I made them for my husband…lol) I absolutely love this recipe….HOWEVER, the PW website was NOT my favorite….I have a 2 yr and I don’t have time for the dramatic recipe instructions that the PW chic went thru on her website…and if I hadn’t read the ingredients from you, I would never know what was involved…..I just thought she rambled on about unimportant stuff instead of just giving us the recipe. Thanks for giving me a winning dinner and I LOVE your new kitchen…..

    Ok, here I am a month later to tell you after actually READING the PW woman website I am totally ADDICTED to her blog and EVERY recipe I have made in the past few weeks are PHENOMENAL. I am so stupid, I didn’t SCROLL all the way down to see the actual recipe card. This woman is so talented and her recipes are so easy. My husband is soooooo digging all the Cowboy MM recipes. Thank you so much for featuring this wonderful blog and literally CHANGING my life this past month. We have experienced excellent food. As usual, you rock. =)
