Southwestern Chicken Chili By eMeals

Life is busy these days.  And yes, I know I am not alone in that.  Whether you are a mama, a business woman, both, life is busy…especially around the holidays.  I try my hardest to continue providing my family with healthy and yummy home cooked meals {almost}every night, but sometimes I just run out of steam.  Its not the actual cooking that burns me out, because that I find kind of therapeutic.  Its the figuring out whats for dinner, pulling from a million and one resources, and then putting together a shopping list. To me, those parts are some I could do without;)

I had been seeing a bunch of my friends lately trying out something called eMeals, and it had me intrigued. eMeals is an online meal planning service that makes life so much easier.  You simply select one of the 13 plans {they have everything from Paleo, GF, to slow cooking}, select your family size, select one of the grocery stores listed {if thats where you shop normally}, and weekly a new meal plan will be sent to you. These meal plans are freaking amazing.  They give you 7 recipes for dinners, all family friendly, yummy, and easy!  Also in the email is a fully detailed shopping list, even broken down in to categories, to make your shopping trip not only easy, but as cost efficient as possible!

We just started our first full week of eMeals this past week, and I wanted to share my favorite recipe from the week.  I love that it was so easy, from start to finish it was on the table in under 30 minutes, and everyone loved it!  You see- long gone are the days that I can spend hours in the kitchen prepping an exotic and labor intensive dinner, because most nights look like this, Bray tugging on me for sample bites, and me looking like a mess from the fun and busy day:

I loved this recipe, so much so that it will be made again without a doubt! They also give you a side dish recipe to go with each main meal, and for this night it was a fresh crisp romaine salad! Here is the soup recipe in case y’all are needing a quick and yummy weeknight meal:

Southwestern Chicken Chili by eMeals:

 
Soup:

2 tablespoons olive oil
1 onion, chopped
3 poblano peppers, chopped
3 cloves garlic, minced
1 tablespoon ground cumin
32 oz container reduced-sodium chicken broth
2 (14.5 oz) cans cannellini beans, drained and rinsed
1⁄2 teaspoon salt,
1⁄2 teaspoon pepper
1 deli-roasted chicken, skin removed and meat shredded
Garnish:
8 oz container reduced-fat sour cream
1⁄2 cup chopped fresh cilantro
2 limes, cut into wedges

Instructions:

 

Heat oil in a large Dutch oven over medium- high heat; add onion, peppers, garlic, and cumin. Sauté 5 minutes or until tender; add chicken broth and beans. Mash beans with a potato masher to thicken mixture; stir in salt, pepper, and chicken. Bring to a boil; reduce heat and simmer 5 minutes or until thoroughly heated. Serve with desired amount of sour cream, cilantro, and lime wedges.
